Week 6--Stuffed Pepper Soup

Ok--this is technically for last week.  I cooked this nice yummy stuffed pepper soup last week to have for lunches and it was PERFECT.  I had made this once before and stupidly put the rice in with the soup to cook and (of course) the rice sucked up all of the juice.  I did it correctly this time and it was MUCH better.

Stuffed Pepper Soup
1 pound of ground beef
1 onion, chopped
1 green pepper, chopped
1 can diced tomatoes
1 small can tomato sauce
4 cups beef broth
salt and pepper to taste
cooked rice

I used my super old inherited from a great great great grandparent cast iron pot for this.  I browned the beef, then added in the veggies and sauteed.  Once that was all cooked down, add the rest of the ingredients and let cook for awhile. 

I cooked my rice on the side (yeah!) and had it ready to go.  Serve soup over white rice, with a little Parmesan as a topping.  It's great! 

I fell off the wagon for week 7.  Being a teacher eats your life sometimes and sometimes when I get home standing up in the kitchen is the absolute last thing I want to do.  Mardi Gras is Tuesday, so never fear, I'm back on the wagon and it's gonna be goooood.

Week 5--Fresh Veggie Salsa

I am NOT a vegetable eater by any stretch of the imagination.  Most of my friends and family tease me and say that I hate all vegetables.  Well, that's not totally true.  I do like some, especially the ones that go into this salsa.  I go through these phases where all I want to eat is this stuff.  I literally bring it to work to eat for lunch, and then come home and have it for a snack.  I have to hold myself back from having it for dinner too.

It's SUPER easy and I got it from my friend Beth.  I think I may have changed a few things or left a few things out.  I don't remember since I've been making it for a long time.

Veggie Salsa
You need...

Half an onion.  Red or White, I've done both
1 tomato
1 bell pepper
1 can of corn
1 can of black beans
some cilantro (I put a ton of this...I LOVE Cilantro)
some Italian Dressing (a squirt from the bottle or two)
a dash of cayenne pepper to spice it up

Mix it all together, and you've got salsa!  I usually eat it with Scoops.  You can catch more salsa that way. :)
